Chocolate Brownies

Ever notice brownies from a brownie mix taste like pure sugar? I was looking for a recipe that tastes like real ingredients. After a bit of tweaking I finally figured it out! This recipe uses a few interesting ingredients like, Silk coconut milk, coconut oil and whole wheat flour.

Ingredients:

1 cup whole wheat flour
1/2 cup all-purpose flour
2 cup sugar or 1 cup Truvia
1/2 cup butter
1/3 cup coconut oil
1/2 cup natural unsweetened cocoa powder
1 teaspoon pure vanilla
4 eggs
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup Silk Original coconut milk

Optional: Baking chocolate chips (dark or milk)

Directions:
  1. Preheat your oven to 350 degrees F
  2. Grease 9x9 pan
  3. Mix all of the dry ingredients together
  4. Mix all of the wet ingredients into the mixed dry ingredients
  5. Pour the mixture into the pan
  6. Sprinkle Dark Chocolate Morsels (baking chocolate chips) on top of the brownies - I used Nestle All Natural Dark Chocolate Morsels
  7. Bake for 25-30 minutes

Pumpkin Bread

To kick this blog and the Autumn season off have a slice of freshly baked pumpkin bread!




Dry Ingredients:
2 cups wheat flour
1 1/2 cups all purpose flour
2 cups packed dark brown sugar
2/3 cup white sugar
2 teaspoons baking soda
1 teaspoon sea salt
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon

Wet Ingredients:
1 can 15 oz pumpkin puree
2/3 cup unsweetened apple sauce
1/3 cup olive oil
2/3 cup Original Silk Coconut Milk

Directions:
  1. Preheat oven to 350 degrees F
  2. Grease mini loaf pans or an 8x4
  3. Mix all of the dry ingredients together in a bowl
  4. Mix in all wet ingredients (I use a hand mixer)
  5. Bake at 350 degrees F for 45 minutes
