Baked Berry Oatmeal


Ingredients

  • 2 cups oatmeal
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 whole egg
  • 2 cups milk (I use Soy brand Coconut Milk - regular)
  • 3 tablespoons slightly melted butter
  • 2 teaspoons vanilla
  • 2 cups of frozen mixed berries

Directions
  1. Preheat to oven to 375 degrees F
  2. Mix together and set aside: oats, sugar, baking powder, cinnamon and salt
  3. In another bowl whisk together: egg, milk, slightly melted butter and vanilla
  4. Grease the bottom of an 8x8 pan
  5. Add half of the mixed berries the bottom of the pan
  6. Add the oat mixture over the berries
  7. Pour the milk mixture over the oats and make sure all of the oats are soaked
  8. Add the remaining mixed berries over the top
  9. Bake for 35-45 minutes
You can serve this hot or cold and with maple syrup to make it a little sweeter.

Banana Oatmeal Muffins

Ingredients

  • 1 egg
  • 1 1/3 cups mashed ripe banana (approx 3 bananas)
  • 3/4 cup packed brown sugar
  • 1/3 cup applesauce
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 cup oats


Directions

1. Preheat oven to 350 degrees F
2. In a large bowl combine: egg, banana, brown sugar, apple sauce and vanilla
3. In a separate bowl sift together: flour, baking soda, baking powder, salt and cinnamon
4. Gently stir flour mixture and oatmeal into banana mixture
5. Pour batter into prepared muffin cups
6. Bake for 15-20 minutes or until light brown
